Lemon Curd Macarons

  3. Thanks, Erica! I've tried this twice now and my tips keep getting stuck on the parchment paper. Plus the tops of yours are so so smooth (smoother than your previous post of lemon macarons). I was wondering if you had any tips for getting such beautiful results? Do you pull out the tips after piping each mac or pipe the whole sheet then use the toothpick?

  4. My tip never touches the parchment paper - I pipe from about 1cm above. I have found (although I tried to ignore other macaron tips I had read) that for a smooth result, you really need to grind your own almonds...it's the only way, but is a hassle!

    I shape the macarons after piping the whole tray.

  5. Thanks! When I use the toothpick it always leaves a line where it passes through and the result is not smooth/even. I guess maybe it's cause I'm using a different batter from you?

  6. My macaron shell recipe is on this blog so you're welcome to try it. Try tapping your trays on a bench after shaping and see if it helps.

  7. Ah I'm tapping before I shape -- I guess you don't tap til afterward? Maybe that's a factor. Thanks!
