Lemon Ganache Recipe - For Olivia

I wasn't sure this would work, and I searched everywhere for a recipe but couldn't find one, but it worked!

100g lemon juice
250g white chocolate
zest of 1 lemon

Heat lemon juice until boiling
Pour over white chocolate (which should be in a glass bowl over simmering water)
Whisk until white chocolate is melted and well combined (takes about 5 mins)
Add lemon zest
Set aside to cool and set

Perfect for lemon shaped macarons (look out for my next post - there will be pictures!)
