Cherry Ripe Macarons

Grinding blanched almonds with icing sugar


Whisking egg whites


Macronage...

Resting to develop skins


For the Cherry Ripe ganache:
70g cream
70g milk chocolate
80g cherry ripe bars, chopped into small pieces

Heat cream, pour over chocolate, whisk until smooth.
Fold in cherry ripe, allow to cool.

Lemon Ganache Recipe - For Olivia

I wasn't sure this would work, and I searched everywhere for a recipe but couldn't find one, but it worked!

100g lemon juice
250g white chocolate
zest of 1 lemon

Heat lemon juice until boiling
Pour over white chocolate (which should be in a glass bowl over simmering water)
Whisk until white chocolate is melted and well combined (takes about 5 mins)
Add lemon zest
Set aside to cool and set

Perfect for lemon shaped macarons (look out for my next post - there will be pictures!)
